Okay - first of all, let me tell you that I genuinely think I've found my new favorite vegetable. And it's cauliflower.
[Pause for dramatic effect]
I know what you're thinking... cauliflower, really? Well, yes, really. Because if you do it right, it's freaking delicious.
AND in the case of this recipe, it totally tricks you into thinking you're eating rice. WHAT?!? I'M CARB FREE!!!! AND I THINK I'M EATING RICE?! PRAISE JESUS.
Okay, so let me tell you about this deliciousness. Ready? Here we go...
Here is what you'll need:
-A Food Processor (this is obviously my favorite kitchen gadget)
-Large skillet
-Stove
Here are the ingredients:
-1 Head of Cauliflower (woooohooo!)
-Coconut Oil (my new best friend)
-1 can of Vegetable Broth
-Any veggies you currently have in your fridge, chopped (I used 1 red pepper, 1 cucumber, and an onion)
-4 minced cloves of garlic (divided)
-1 lb ground beef
Here's what you do:
1.) Break up cauliflower into a food processor and pulse until finely chopped.
2.) Put a tablespoon of coconut oil into a large skillet over medium high heat. Add 1/2 of the chopped red pepper, 1/4 of the chopped onion & 2 of the minced garlic cloves - cook and stir until tender.
3.) Add the finely chopped cauliflower to the skillet with a pinch of sea salt, stir.
4.) Stir in 3/4 cup of vegetable broth, cover, and steam for about 6 minutes (or until broth has evaporated).
5.) Once cauliflower is tender and all veg broth has evaporated, transfer cauliflower mixture to bowl and cover with aluminum foil.
6.) In same, now empty, skillet, heat one tablespoon of coconut oil. Add the remaining 1/2 of the red pepper, rest of the onion, 2 chopped cucumbers & remaining 2 cloves of minced garlic. Sauté. Add a pinch of sea salt.
7.) Once cooked through (you will be able to tell it's done once the onions have turned translucent), transfer into bowl, cover, and set aside.
8.) Brown your ground beef. Once cooked, put in bowl.
9.) Scoop, layer, pretend you're eating rice & Enjoy!!
-Makes 4-6 servings- (depending on how many times you go back for seconds)
Full Disclosure: Lately, I've kind of discovered that if you realize you don't need a recipe for everything, you tend to cook more often. I mean listen, food is food. Lots of it goes together. And in a lot of different ways. So it's actually REALLY hard to mess it up. When you realize that, you'll start 'throwing stuff together' more often because the fear of cooking something exactly to a recipe goes away. So experiment! Especially with a recipe like this, make it your own! If you don't have one ingredient, substitute it for something else! I bet it'll still be delicious!!
