Longest blog post title ever, right?! Sorry, but I had to get all the facts out there. What's left to put in the cookies you ask? Pure deliciousness, that's what.
Do you have a sweet tooth? I sure hope so because immediately following this post you will walk straight into your kitchen and preheat your oven to 350, and that's an order. You are going to want to make these! I promise! And they're SO simple, and so quick! and do I have to say it? SO DELICIOUS.

Let's just jump right into this because let's be honest, we don't want to waste any time with small talk because your mouth is watering, isn't it?
Here is what you'll need:
-Medium mixing bowl
-Small mixing bowl (like a cereal bowl size)
-spoon
-measuring cups
-cookie sheet
Here are the ingredients:
-1 c almond meal (OR 1 cup of food processed almonds, make your own!)
-1/8 tsp salt
-1/8 tsp baking soda
-1/3 cup of chocolate chips (I use the amazing brand Enjoy Life which are gluten, soy and dairy free!)
-3 Tbsp melted coconut oil
-2 Tbsp organic honey
-1 Tbsp almond milk
-1 tsp pure vanilla extract
Here's what you do:
1.) Preheat oven to 350.
2.) Mix all the dry ingredients together in the medium sized bowl. (almond meal, salt, baking soda)
3.) Whisk together wet ingredients in small bowl. (coconut oil, honey, milk, vanilla)
4.) Pour the wet ingredients into the dry ingredients. Mix together. Add chocolate chips once mixed.
5.) Spoon out dough onto a parchment paper lined cookie sheet. (makes about 5 large cookies)
6.) Bake 9-11 minutes or until lighten brown on the bottom.
7.) Remove and let cool, then eat all 5 at once. (kidding). (sorta).

Step 4) Combine all ingredients, mix in chocolate chips (ok I know this picture isn't exactly appetizing, it kind of looks like oatmeal... but stick with me, I promise we go up from here)
Step 5 & 6) Spoon out onto parchment paper & bake!! Depending on your oven, at 350 degrees, they should be done between 9-11 minutes!
Step 7) Pull parchment paper off of cookie sheet and slide onto counter top. Let cool. Then DEVOUR. (or in my case, take 1923 pictures, then eat all 5 cookies immediately).
And of those 1923 pictures I took, here are a few. And holy cow yall, I can't wait for you to try these. They taste even better than they look! And oh, did I mention that they're Paleo, Dairy-Free, Sugar-Free, Soy-Free AND Vegan?!
After I baked these for the first time, I stuffed them down the throats of everyone that walked in my home for the following 24 hours. My bestie Mike who came over for dinner looooved them as did my girlfriend Joanna, my dear friend from The Kind Cake (which I'll explain in more detail in the next post... but in the mean time, check her out!)
