So breakfast is the most important meal of the day, right? This statement has been pounded into our heads since we were children. When you're trying to lose weight, this statement is REALLY true. Breakfast starts off your day on the right foot, it sets the tone for the rest of your meals that day, it jump starts your metabolism, etc etc etccccc.
That being said, I've been very into breakfast lately. Whether it's eggs and bacon, a smoothie, fresh fruit... you name it, I've probably made it within the past month. But up until yesterday, I didn't exactly think BANANA PANCAKES would make my list of "healthy and delicious breakfast recipes" while we're on this Whole Food and Clean Eating Challenge. I was wrong.
My best friend and soon to be Maid of Honor's name is Laurel. She'ssss pretty fabulous. She's this teeny tiny little nugget who loves working out and eating healthy... the best kind of best friend to have while on this clean eating challenge, right?! I know. So Laurel and I have constantly been bouncing recipes off of each other for the past month, and well, for the past 15 years for that matter. But yesterday she told me I hadddd to try these new banana pancakes. I immediately reminded her, "girl... I can't have anything with flour in it, how could I eat pancakes?" Then she sent me the recipe. I was baffled! "How do you get pancakes from these 4 simple ingredients?!?" She pretty much told me to shut up and try it, so I did. And boyyyyy were they delicious.
SO! Here is the recipe for GRAIN/WHEAT/FLOUR/SUGAR FREE banana pancakes, and while you're reading and/or making these for breakfast, lunch and/or dinner (bc you'll love them enough to make them for every single meal), please enjoy Jack Johnson's song, "Banana Pancakes" to get you in the mood (By Clicking Here)
Here is what you'll need:
-A Fork
-A Bowl
-A skillet
-Stove
Here are the ingredients:
-1 Ripe Banana
-2 Eggs
-1 t cinnamon
-1 t vanilla extract
Here's what you do:
1.) Lay out your ingredients.
2.) Mash up the ripe banana in a bowl.
3.) Add both eggs, mix well.
4.) Add cinnamon and vanilla.
5.) Let skillet get HOT on stove, spray with cooking spray
6.) Pour "pancake batter" onto skillet, flip.
7.) Indulge.
**makes one large pancake, double the recipe for 2 servings**

Step 2) Put your banana into the bowl, mash. And mash a lot.
Step 3) Add eggs, mix well.
Step 4) Add cinnamon and vanilla, then get to stirring one last time!
Step 5) Let skillet get HOT on the stove before adding batter. Spray with cooking spray.
Step 6) Pour in batter, let cook, then flip. (Sweet baby Jesus look at that perfect flip!! I mean.... that's talent people).
Last but certainly not least...
Step 7) Transfer pancake to your plate, add your desired toppings, and indulge! (ok so my transfer from skillet to plate wasn't as graceful as my flip in the pan while cooking...)

I topped my banana pancake with a little bit of agave syrup and a few pineapple chunks... Like, I'm not kidding, my mouth is now watering thinking about it. And I ate this probably 4 hours ago. Also, the pancake is HUGE. I know you can't really tell from these photos because they're close up and there's nothing to compare it to size wise, but that's a full dinner plate. So if you wanted to make 2 smaller pancakes with the batter from this recipe, you definitely could.

SO! The moral of this story, is always trust recipes that Laurel sends you and never doubt her. Because holy hell, this was delicious!!
